Description of Work
Reporting to the Correctional Food Service Manager, this position is located in the Food Services department at a multi-custody male correctional facility. Job responsibilities include, but are not limited to, the following:1. Providing supervision for Correctional Food Service Officers.
2. Providing oversight of offenders performing large-scale food activities.
3. Supervising the preparation and service of regular and therapeutic diets for the offender population.
4. Planning, directing, and supervising the daily preparation and serving of food to offenders.
5. Daily work includes food preparation, serving, storage, menu planning, menu substitutions, and maintaining sanitation requirements.
6. Performing required recordkeeping.
7. Using computerized food and nutrition systems to prepare and serve daily meals.
8. Conducting employee work appraisals.

Management Preferences
Documented experience in sanitation, preparing menus, managing inventory, and/or other large-scale food service production activities.
Documented supervision of employees and/or offender workers.

This is a full-time position (40 hours per week) with State Benefits. The selected candidate may be selected to work any shift and will work weekends and holidays to ensure 24/7 staff coverage.

The salary grade for this position is NC10. State employees are encouraged to apply for positions of interest even if the salary grade is the same as, or lower than, their current position. If selected for this position, a new salary will be recalculated taking into consideration the quantity of relevant education and experience, funding availability, and internal equity. Based upon these factors, a pay increase MAY result.
About Central Prison:
Central Prison in Raleigh, NC has been in continuous service since 1884. It serves as the admission point into prison for adult male felons sentenced to 20 years or more and is the main medical and mental health center for male offenders. It also houses special populations, including death row and safe-keepers.
While security requires that certain offenders remain in their cells, there are more than 260 offender job assignments that include working in the kitchen, laundry or canteen. Offenders also work as barbers, janitors and clerks. Offenders can attend substance abuse group therapy meetings, Bible studies or worship services.

Minimum Education and Experience

High School or General Educational Development (GED) diploma AND four years of experience in institutional food preparation and food services, in management of a commercial food service operations, or as a Correctional Officer, OR three years as a Correctional Food Service Officer; or an equivalent combination of education and experience.
Necessary Special Qualifications: Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
