The role:
The Food Safety Specialist (FSS) oversees integrity around food safety and quality assurance standards. Oversight includes compliance, regulatory enforcement, documentation accuracy, and training protocols. FSS oversees commitment to rigorous food manufacturing and production by enforcing a sustainable, safe, clean, and functional environment in the CookUnity Commissaries.
Responsibilities:
- Cross-department collaboration with members of Food Safety, Culinary, Supply Chain, and Sales
- Monitor employee training on food safety and sanitation topics
- FSQS Data entry, monitoring, updates
- Working with external testing laboratories and various local/state licensing and permitting bodies.
Data Systems Oversight:
- Review database of existing raw material ingredients & packaging components to identify required spec information needed/missing
- Create a system to organize existing database components in both the internal Recipe Management System as well as cross-utilization in external software such as Genesis and TraceGains
- Oversee NFP (Nutrition Fact Panel) generation for accuracy
- Take ownership of data integrity around nutrition, allergen, compliance for individual food ingredients and final finished products
- Determine protocols around new supplier onboarding
Manufacturing and Production Oversight:
- Review hazard analysis and preventive controls, determine critical controls and assist in creating policy, procedure and supporting records or documentation.
- Create risk based list of priority meals requiring prefect recipe execution at the manufacturing level
- Communicate with the stakeholders and chef community of critical control points for manufacturing of specialty meals
- Create testing methods, parameters and sampling plan for validation of label declaration and working with the external lab to create the end to end testing program
- Monitor food production and quality check records/documentation and ensure all Chefs are adhering to food safety regulations including refrigeration, chemical concentration and and temperature check records
- Review cooler function and sanitary transport data to ensure B2B shipments meet chill chain requirements
Qualifications:
- Bachelors in Food Science with 3-5 years of experience
Knowledge of US regulatory label and nutritional declaration requirements - Detail-oriented with strong organizational skills
- Good communication skills and ability to speak in a professional manner to a wide range of partners and stakeholders
- Bilingual English/Spanish required
- Ability to visit US as and when required
