Join our team in Aman Rosa Alpina. Since its opening in 1939, Rosa Alpina has offered its guests an unparalleled base for exploring Italy's UNESCO-protected Dolomites, celebrating the history of the property while uniting it with Aman's philosophy.

Role Overview

We are looking for a skilled and confident Chef de Partie to take full ownership of a designated section within our kitchen brigade. In this role, you will be responsible for ensuring consistency, quality, and smooth operations within your station. You will act as a mentor to Commis and Demi Chefs, ensuring that every plate leaving your pass meets Aman’s rigorous standards of perfection.

Key Responsibilities

  • Section Management: autonomously run a specific section of the kitchen (e.g., Saucier, Entremetier, Garde Manger, or Pastry), ensuring all preparation and service runs seamlessly.

  • Culinary Excellence: Prepare and present high-quality dishes, paying strict attention to taste, temperature, and visual presentation.

  • Team Supervision: Guide, train, and supervise Commis and Demi Chefs de Partie, fostering a positive learning environment and ensuring the team works cohesively.

  • Stock Control & Ordering: Monitor inventory levels for the section, prepare daily market lists, and manage stock rotation to minimize waste and ensure cost efficiency.

  • Hygiene & Safety: Enforce the highest standards of sanitation, cleanliness, and safety (HACCP) within the section at all times.

Qualifications & Requirements

  • Experience: Minimum 3-4 years of culinary experience, with at least 1 year in a Chef de Partie or strong Demi Chef de Partie role within a 5-star luxury hotel or Michelin-starred restaurant.

  • Culinary Knowledge: Advanced knowledge of cooking techniques, ingredients, and kitchen equipment.

  • Leadership: Proven ability to manage a small team, delegate tasks effectively, and maintain composure under pressure.

  • Languages: Fluency in English is essential; proficiency in Italian
