Role
We are seeking an exceptional Area Culinary & F&B Operations Director based in Amangalla to lead and elevate food and beverage operations across a portfolio of Aman properties in Sri Lanka and India, including Amangalla, Amanwella, Aman-i-Khas, and Amanbagh. This senior leadership role is responsible for driving culinary excellence, operational consistency, and financial performance across the region, ensuring all experiences reflect Aman’s renowned standards of luxury, authenticity, and guest satisfaction.
Working closely with on-property teams, corporate leadership, and key stakeholders, you will play a critical role in shaping strategy, fostering innovation, and maintaining the highest levels of quality across all locations. This is a highly visible, hands-on position requiring extensive travel and a strong on-property presence to support operations, enhance performance, and deliver best-in-class dining experiences.
Responsibilities:
- Conduct 12 weeks of property visits annually to assess food quality, operations, hygiene, and brand compliance
- Review and approve menus and recipes to drive innovation and profitability
- Oversee health, safety, sanitation, and food allergy compliance
- Ensure consistency through approved recipes and corporate culinary guidelines
- Maintain world-class F&B standards (LQA), service quality, and operational efficiency
- Monitor KPIs (food/labour costs, payroll, profitability) and implement cost-control strategies
- Oversee budgeting, revenue management, capex, and vendor performance to maximise ROI
- Lead, develop, and support Executive Chefs and F&B leaders across properties
- Drive training, recruitment, succession planning, and a high-performance culture
- Support strategic growth, new openings, innovation, and act as a brand ambassador while travelling extensively
Requirements:
- Minimum 10 years of progressive culinary and F&B leadership experience, including regional or multi-property exposure within luxury hospitality (preferred but not mandatory).
- Multi-property role within luxury hospitality important but not mandatory
- Proven success in managing diverse, multicultural teams across multiple geographies.
- Strong business acumen and financial management capabilities with a track record of driving profitable growth.
- Formal culinary education and relevant certifications preferred; strong knowledge of food safety and hygiene regulations required.
- Excellent communication, interpersonal, and stakeholder management skills.
- Deep understanding of regional markets, cultures, and culinary landscapes.
- Strategic thinker with a passion for food innovation, guest experience, and brand development
