JF Restaurants is a New York City-based hospitality group led by Michelin-starred Chef and Restaurateur John Fraser. 

 

General Manager – Ondîne (Opening Summer 2026)
West Village, New York City

Ondîne is the newest project from Chef John Fraser—an intimate, 35-seat French-inspired bistro marking his return to a familiar West Village address. Rooted in immediacy, sourcing, and nostalgia, Ondîne is a restaurant where cooking happens in real time: herbs cut to order, sauces finished à la minute, and ingredients sourced both locally and globally. A focused wine list and a concise, evolving cocktail program complete the experience.

Small in size, ambitious in execution—this is a hands-on, detail-driven operation where every seat matters.

We’re seeking a General Manager to lead the opening and set the tone for what hospitality looks and feels like at Ondîne.

The Role

The General Manager is the business and hospitality leader of Ondîne—responsible for driving financial performance while building a culture of excellence on the floor. This is a highly visible, service-forward role that requires equal strength in operations, guest experience, and team leadership.

What You’ll Do

  • Own the business: Manage budgets, forecasting, cost controls, and revenue strategies to ensure strong financial performance
  • Lead service: Set, refine, and uphold exceptional service standards—present, engaged, and leading from the floor
  • Build the team: Hire, train, and develop a small, high-performing team with a strong culture of accountability and care
  • Drive beverage excellence: Oversee a focused wine program and evolving cocktail offering with confidence and curiosity
  • Collaborate closely with the kitchen: Partner with Chef John Fraser and the culinary team to ensure a seamless guest experience
  • Create a point of view: Help shape the identity of Ondîne through thoughtful touches, consistency, and attention to detail
  • Be hands-on: This is not a back-office role—you’ll be actively involved in service every day

What We’re Looking For

  • Strong financial acumen with a proven ability to manage and grow a business
  • Someone who lives and breathes hospitality—instinctively guest-focused and detail-oriented
  • Deep knowledge of food, wine, and beverage, with the ability to guide both team and guests
  • A commitment to service excellence—you know what “great” looks like and how to deliver it consistently
  • Experience leading, coaching, and developing teams in a high-performance environment
  • Comfort in small, ambitious settings where standards are high and resources are lean
  • NYC experience strongly preferred

Salary Range
$90,000$100,000 USD
