Job Summary
SummaryYou will work with other team members to assure that the Kitchen and Equipment are kept organized, clean and sanitized. You will work with other team members to achieve the department's goal of a Gold Standard Department- a Department that exceeds the standards set by JCAHO and the State of MA.

Essential Functions
-Pot and pan responsibility:
-Washes pots, pans and cooking utensils.
-Stores equipment and utensils in proper location.
-Maintains correct water temps- changes water every 45 min. or as needed.
-Utilizes correct solutions at proper strengths to ensure equip is clean & sanitized.
-Pots, pans and utensils are free of grease and food particles.
-All pots, pans and utensils are air dried before being put away.
-Pot room floor mats are cleaned.
-Works in the dish room from 12:30-1:30, washes cafe dishes properly.
-Keeps dish return area clean.
-Sweeps kitchen floor twice daily.
-Mops floor and uses wet floor sign.
-Empties trash as needed, takes out milk crates and boxes.
-Washes kitchen walls.
-Cleans and sanitizes trash barrels and cart daily.
-Cleans and sanitizes chopper, slicer, grill, skillet and kettles after each use.
-Follows safety precautions when cleaning equipment.
-Storeroom responsibility:
-Puts away food orders in their proper location.
-Labels and dates all food supplies as they are put away.
-Ensures that supplies are properly rotated- FIFO.
-Ensures that food is properly stores- cooked over raw.
-Sweeps and mops refrigerators and storeroom.
-Maintains storeroom and coolers- boxes and milk crates are removed.
-Sanitation:
-Uses clean as you go method.
-Wears a hair restraint.
-Follows cleaning list.
-Wears clean uniform.
-Washes hands at shift start and throughout shift.

High School Diploma or Equivalent required

Experience
Prior work experience in a kitchen with various cleaning and sanitation methods preferred 0-1 year preferred
Knowledge, Skills and Abilities
- Must be able to read, write legibly, speak clearly and understand the English language.
- Must possess the ability to make independent decisions when circumstances warrant such action in a timely fashion.
- Must possess the ability to deal tactfully with staff, patients, family members, visitors, government agencies/personnel and the general public.
- Must possess the willingness to work harmoniously with professional and non-professional personnel and the general public.
